Artichoke Pasta Recipe
Simple yet satisfying, this artichoke pasta recipe is a great summer treat when artichokes are at their peak freshness.

Serves 4-6 Ingredients 1 (6 oz) can artichoke hearts in water, drained4 tbsp extra virgin olive oil2 cloves garlic, chopped1 medium white onion, chopped5-6 fresh basil leaves1 lb box pasta of your choice (I usually use a long variety)1/4 cup grated parmesan cheese1/4 cup white winesalt and black pepper
PreparationIn a large skillet, heat about a tablespoon of olive oil. Add the chopped onion and garlic. Let these cook for a couple of minutes, stirring occasionally. In the meantime you can chop the artichoke hearts into bite sized pieces. Then add these to your pan. Allow them to cook until they are thoroughly heated. In the meantime prepare a large pot of salted water by bringing it to a boil. Add your pasta and let it cook according to the package instructions. Pour the white wine to the pan and turn the heat down low. Let all your ingredients simmer for about 5 minutes, which will help the wine reduce a little bit. Shred the basil leaves and add them to the mixture. If you don't have fresh basil, you can add about 1/2 tsp of the dried variety. Add a little bit of salt and black pepper (I sometimes add red pepper flakes, too)...about a pinch of each. When the pasta is cooked, use tongs to remove it from the cooking water and put directly into the pan. Add the rest of the olive oil and toss together gently over low heat. Once everything is pretty well combined, transfer to a serving platter. Allow your guests to top the dish off with the grated parmesan cheese. Yum!
