Baked Potato Recipe

This is not your typical baked potato recipe. In fact I only call it that for lack of a better description. But that's besides the point, this potato side dish is the perfect accompaniment to almost any dish, especially roasted lamb. The best part is, it's super easy too!

Serves 4.

Ingredients

  • 4 large white potatoes, washed and scrubbed
  • 2 tablespoons extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and black pepper

    Preheat your oven to 375 degrees. Prepare the potatoes by washing and scrubbing them clean. If you like having the skin on, just be sure to cut away any dimples or roots that are beginning to appear. If you prefer them peeled, more power to ya (my Mom NEVER serves unpeeled potatoes, but that's her. I like them either way!)

    Chop the potatoes into bite-sized cubes. In a large bowl, combine them with the remaining ingredients (except for salt and pepper) and toss to coat. Lay them in a single layer on a slightly greased cookie sheet or pan. Sprinkle lightly with salt and pepper and throw into the oven.

    Cook the potatoes for about 15 minutes and then using a spatula or tongs, mix them around to allow them to brown a little on another side. Bake for an additional 15-20 minutes until a fork goes through a single potato easily. They should be nice and golden with a crispy side or two. Serve as a side to your favorite dish!
