Fresh Caprese Salad Recipe

This caprese salad recipe, or insalata caprese in Italian, is made with three basic ingredients. It can be served as a cold appetizer or as the "salad" side dish to the main course.

This antipasto is popular in Italy both for the simple flavor combinations, and the fact that the main ingredients represent the colors of the national flag. Red = tomatoes, white = mozzarella, green = basil.

It's patriotic and delicious!

Serves 4

Ingredients

  • 4 large tomatoes
  • 2 cups Mozzarella Di Bufala Cheese
  • 9 or 10 leaves fresh basil
  • 4 tbsp extra-virgin olive oil
  • salt and black pepper (optional)
  • Using a sharp knife, slice up the mozzarella and tomatoes into thick rounds.

Get out your serving dish and arrange the slices in an alternating pattern around the dish. Add the basil leaves in any way that pleases your eye...make a pattern or just sprinkle them on top.

Drizzle the salad with olive oil and a pinch of the salt. Allow your guests to add black pepper at their discretion.

Serve with some crusty Italian bread, and (ta-dah!) you're done!
