Fresh Cucumber Salad Recipe

As far as a cold appetizer recipe goes, this fresh cucumber salad recipe is by FAR the easiest!

cucumber salad, fresh cucumber slices, sliced cucumber It can be made ahead of time and chilled or be prepared right on the spot - either way it sure is a cool, wonderful summer treat.

Serves 2-4

Ingredients

  • 3 large, firm cucumbers
  • 1 small white onion, thinly sliced
  • 1 1/2 tsp dried oregano
  • 2-3 tbsp white vinegar
  • 1 tsp olive oil
  • salt (to taste)

    The first step depends on a matter of preference. If you like the skin of the cucumber you can simply scrub them clean, and begin to chop them up that way. If you prefer the cucumber peeled (or you taste the skin and it is too bitter), remove the skin and start chopping away. There really is no wrong way to slice this veggie, although I usually halve it the long way, and then slice little half-moons.

    Toss the cucumber slices and onions in a bowl together with the salt, oregano, oil and vinegar. Chill or serve immediately. It's that easy!
