Italian Potato Salad
This tasty Italian potato salad is not only delicious but it's healthier than it's American-counterpart (no mayo involved = guilt-free eating)... Make it a day ahead and it will taste twice as nice - enjoy! Serves 4
Ingredients 6 medium white potatoes 3 tbsp white vinegar 2 tbsp olive oil 2 tsp salt ½ tsp dried oregano Prepare your potatoes by washing and scrubbing them. Place them in a medium sized pot and fill until water just covers the potatoes. Turn the heat up and bring the water to a boil. When it is boiling, add the salt. Allow the potatoes to boil for approximately 15 minutes, or until a fork pushes through them easily. When they are soft, drain the water and rinse with cold water to help cool them down faster. When they are cool to the touch, peel and dice them and place into your serving bowl. Add the remaining ingredients, toss, chill (2 hours - overnight) and serve!
