Meat recipes in Italian cooking vary greatly...

...because, in the past, depending on the region of Italy, only certain products were available to the locals. Therefore meat recipes in Sicily are very different from those of Northern Italy.



chicken parmesan recipe, chicken parm My family originates from Sicily and Calabria, both Southern portions of the country. Although we did eat meat at my house growing up, it wasn't always the main focus of daily meals - and tended to only make an appearance at larger family gatherings.

However, the foods we do make range from roasted lamb to spicy Italian sausage with peppers and onions! Which happens to be one of my all-time favorites - and as you've probably noticed has become quite popular in the US as well.
