Pumpkin Pizza with Feta Cheese

Here's one of my favourite Friday night pizza recipes - Pumpkin pizza with feta cheese! It's pretty healthy and really easy, too!
Ingredients
Pizza base, pita bread or lebanese bread
Tomato paste
Small handful of baby spinach leaves
Red/Spanish onion
teaspoon of minced garlic
Pumpkin
Fetta cheese
Cherry tomatoes
Small amount of oil1) Peel and dice approximately two handfuls of pumpkin
2) Pan fry or roast in a small amount of oil the diced pumpkin and garlic, until the pumpkin becomes soft (when a fork sticks through easily)
3) Place base on pizza tray & spread on tomato paste
4) Top base with spinach, sliced/diced onion, cherry tomatoes, pumpkin & fetta
5) Cook in a moderate oven for appox 12 minutes or until pizza is golden brown
6) Enjoy!
