You've got to have a great assortment of simple vegetarian recipes to choose from, when it comes to cooking Italian food, .
In fact, most of the food that was made in my mom's (and now my) kitchen was of the vegetarian variety.
Depending on whether you're looking for an entire vegetarian meal, or just a side dish, you'll find that making food that's both tasty and meatless is not as hard as it may seem!
Some of these recipes are a bit more complex than others, but all of them use fresh, tasty ingredients, and after a couple of attempts, you will see that the only thing complicated about Italian food is how to decide what to make (and eat!) next!

I've discovered that avoiding meat is not as difficult as it seemed. The trick is to find a substantial vegetable to feature, like an eggplant. Make sure to surround it with quality herbs and seasonings, and you'll not even notice there's no meat in the picture.
In the spaghetti recipe featured here, the zucchini takes the place of a meat and does an admirable job of it, too.
There are many times a large baked potato (sweet potato in my case) can be elevated to main dish position, too. But if you have a guy to keep happy, it might be better to leave it as a side dish to make sure he has plenty, along with a main course.
Add a lovely bottle of wine, a large loaf of freshly baked bread, and a slab of real butter, and you've got a gourmet meal.
