Fresh Tomato Salad Recipe

chopped tomatoes, tomatoes, raw tomatoes This tomato salad recipe glorifies the main vegetable at the heart of Italian cooking, and it's no surprise that Italians like to eat salad made simply of tomatoes! Fresh and delicious, it was always a sure sign of summer whenever we consumed this salad at my house. Serve it as an appetizer or side, or just make it the main attraction with some crusty Italian bread!

Ingredients

  • 4-5 large ripe tomatoes
  • small white onion, sliced
  • 1 or 2 cloves of garlic, finely chopped
  • 4 - 5 leaves of fresh basil
  • 3 1/2 tbsp extra virgin olive oil
  • salt to taste
  • 1/2 tsp of dried oregano
  • Cut the tomatoes up into bite sized pieces. Toss into a bowl with the sliced white onion and chopped garlic. Add the basil, torn into small pieces. Top with the olive oil, salt and oregano and mix well. Let the salad sit for a few minutes before serving to let the juices of the tomatoes come out a little. Serve with warm Italian bread, yum!!
