Light and Airy Zabaglione Recipe

Zabaglione (zah-bahl-ee-oh-neh), is a quick custard that is yummy and warm. Getting this zabaglione recipe just right could soon make it one of your favorite dessert recipes to create.

This Italian dessert should be prepared just before serving, so make sure to get all your ingredients ready and just mix them all together when your guests are ready for something sweet!

Serves 6

Ingredients

  • 4 egg yolks
  • 1/2 cup dry Marsala wine
  • 1/3 cup caster (or super-fine) sugar
  • Fill a pan half-way with water and bring to a simmer.

    In a large heat-proof bowl, combine the egg yolks and sugar. Beat with a hand-mixer until creamy.

    Place the bowl over the pan, being careful that the bottom of the bowl does NOT touch the water (unless you want some scrambled eggs in your dessert!) Gradually pour in the Marsala, whisking the mixture until it is very thick and increased in volume.

    Remove from heat and pour into individual heat-proof glasses. Serve immediately, with or without savoiardi (ladyfingers) or fresh berries. Buonissimo!
